Curry Summer Vegetables
A great tasty side dish and good way to use up excess summer garden vegetables.
What is Alpha-gal?
Servings: 4 to 6
Prep time: 30 min
Cooking time: 20 min
Ready to eat in: 50 min
Utensils: Large skillet
- Olive oil
- 2 small zucchini - cut in large cubes
- 1 small onion - cut in large chunks
- 2 cups tomatoes - cherry, roma or small tomatoes cubed
- 1 jar curry simmer sauce
- 1 can coconut milk
- salt and pepper to taste
- 2 cups cooked rice
- Bunch fresh parsley
Directions
Cut up all the vegetable into course chunks. Sauté onions and zucchini in olive oil until onions soften. Add tomatoes and curry sauce, coconut milk, salt and pepper simmer until hot. Serve over cooked rice, top with fresh parsley or chives

- Great with almost any fresh summer vegetables like squash, green peppers, cauliflower, potatoes (cooked), carrots or egg plant.
- Diced hot peppers to taste.
- Add cooked chicken or shrimp for a complete meal.
