Homemade Almond Milk Ice Cream

Dairy free and can be made vegan if you desire, substitute another banana for the egg yolks. This is the perfect companion to the Fried Banana Bread Recipe. What is Alpha-gal?

Servings: 4 to 6     Prep time: 25 min     Cooking time: 10 min
    Ready to eat in: 35 min plus freezer time (about 30 min) and chilling time
Utensils: blender, ice cream freezer, sauce pan

Fried Banana Bread
2 cups Vanilla flavored almond milk
1 banana - peeled and cubed
1 tsp vanilla
¼ cup sugar
4 egg yolks

Directions

Add all ingredients to a blender or food processor. Puree until smooth. Remove to sauce pan, cook on low 4 to 6 minutes or until mix coats the back of a spoon, whisk often, Remove to refrigerator until completely cooled. Pour in ice cream freezer per your manufactures instructions.

Since homemade ice cream is best served directly from the ice cream maker I suggest cook the mix the day before and refrigerate in a covered bowl until you are ready to churn it. The cooked mixture will keep several days refrigerated. It gets very hard in the freezer, allow time to soften enough to scoop if you have churned the ice cream in advance and frozen it in the refrigerator freezer.

Alternative Recipe Ideas

  • Chocolate - add 2 heaping tablespoons of coco powder.
  • Fruit - after cooking add your favorite fruit; strawberries, peaches, chopped nuts.
  • Preserves - add 3 or 4 tablespoons of fruit preserves for flavor.
