Greek Turkey Cutlets
Another really tasty alternative using turkey for those of you who cannot have beef and pork. Chicken is also a wonderful alternative and a more traditional Greek entree´.

Utensils: Large frying pan, pasta pot, strainer
- 4 ea turkey cutlets - dredged in herb flour mix below
- 1/3 cup plus olive oil
- 1 lb spaghetti, angle hair pasta or your favorite pasta
- 1 can diced tomatoes with peppers and onions
- 1 can pitted black olives - drained
- 2 cloves garlic minced
- 1 handful of fresh torn basil leaves
- salt and pepper to taste
Greek Spice
- ˝ tsp fresh ground pepper
- 1 tsp sea salt
- 1 tsp dill weed
- 1 tsp rosemary
- 1 tsp thyme
- 1 tsp marjoram
- 2 heaping tab parsley
- ˝ tsp nutmeg
- 4 tab rice flour
Directions
Mix the Greek spice ingredients together. It is best if you have a spice grinder to grind all the ingredients first then mix it into the flour. Regular flour or corn starch will also work if you are not gluten free. Use the Greek spice mixture to dredge turkey cutlets. Sprinkle any remaining spice on top of the cutlets.
Start the water to cook your favorite gluten free pasta. Cover bottom of frying pan with approximately 1/3 cup olive oil. Don't worry about using too much you are going to use the drippings to toss into the pasta and make the sauce. Sauté the turkey and start cooking the pasta. When the cutlets are cooked remove to warm oven. Add tomatoes, garlic, olives, salt & pepper to drippings. Heat mixture and toss in the pasta and fresh basil.
