Potato Sauerkraut Fritters A cross between colcannon, fritters, potato pancakes and German food. They are very tasty, something very different for a nice change. Also vegetarian and healthy. Give them a try. What is Alpha-gal?

Cooking time: 15 min
Directions Bake or microwave the potatoes and set aside to cool. Squeeze most of the water from the sauerkraut and place in mixing bowl. Add all the remaining ingredients to the bowl and stir to coat well. When the potatoes have cooled enough to handle cut into small cubes. Leave the peeling on. Add to the mix, course mashing the potatoes as you stir. Form balls out of the mix to your desired size, then press them into patties. Fry in olive oil until golden brown. Alternative Recipe Ideas
