Spicy Sweet Potato Soup

A delicious spicy soup, very hardy and a warming winter soup. This resembles a spicy winter squash soup. Both squash and sweet potatoes are good and good for you. What is Alpha-gal?

Utensils: Large stock pot, hand held immersion blender

Spicy Sweet Potato Soup
4 cups chicken stock
5 lb sweet potatoes - peeled and diced
1 lg onion - diced
4 lg cloves garlic - diced
6 dried smoked jalapeñoes - crush and remove stems
½ tsp chili powder
½ tsp thyme
1 tsp cumin
1 tsp sea salt - to taste
½ tsp fresh ground pepper
2 limes - juice only
1 cup water
½ cup dry white wine
cilantro - for garnish

Directions

Add all ingredients to stock pot and bring to a low boil, cook until sweet potatoes are done. Using a hand held blender puree the soup until a smooth liquid. Simmer for 10 or 15 more minutes. Serve and garnish with cilantro. Six jalapeñoes is a good medium spicy soup, add more or less for your taste.

Alternative Recipe Ideas

  • Almond milk - add 2 cups of almond milk and some more salt to make this a creamy less spicy soup.
