Vadalia Onion Salad
A great salad for a picnic. Make ahead, keeps well. A great alternative to taking baked beans - again.
Servings: 6 to 8
Prep time: 25 min
Cooking time: 10 min
Utensils: Frying pan, 1 quart serving dish
- 1 Kielbasa sausage - sliced and sautéed
- 8 med mushrooms - sliced
- 1/2 Vadalia onion - sliced in spears
- 1/2 ea red and green peppers - julienne sliced
- 1/2 cup Velveeta cheese - cubed
- 2 roma tomatoes - diced
Dressing
- 1/4 cup honey mustard dressing
- 1 tsp sugar
- 1 tsp lemon pepper
Directions
Sauté sausage and let cool, slice all vegetables and toss with dressing. Chill for 1 hour or more. Best if made the day before so the flavors meld together.
Alternative Recipe Ideas

- Black olives.
- Cucumber - peeled and cubed, this does not keep as well.
- Fresh chives or thyme from the garden.
