French Tarragon Tuna Salad

French tarragon is much more flavorful and robust than the standard tarragon. Regular tarragon also works, but you may want to up the quantity. Tarragon pairs perfectly with tuna.

Quiche
2 cans albacore tuna - drained
3 or 4 scallions - chopped
2 tab sweet pickle relish
1 stalk celery - diced
2 to 4 hard boiled eggs - diced, depending on how much egg you like
few grinds of fresh pepper
2 tab mayonnaise - more or less per taste
3 o 4 stalks of French tarragon - strip leaves and chop into small pieces. This should yield a heaping teaspoon when finished.

Directions

Drain the tuna and chop all the ingredients. Mix together in small mixing bowl. Served in the photo in a tomato half with a piece of fresh Ciabitta bread. Of course it is also delicious in a good old fashioned tuna sandwich with chips.
