Chicken Black Bean Tacos
Really quick and filling, plus who doesn't love tacos?

Utensils: Frying pan
- 1 can black beans - rinsed and drained
- 2 chicken breast - cut into fajita strips
- 1 sm onion - thin slices
- 3 cloves garlic - minced
- salt & pepper to taste
- small flour tortillas
- hot sauce to taste

- Additional fillings per your taste:
- Shredded cheese
- Diced tomatoes
- Shredded lettuce
- Black olives
- Sour cream
Directions
Rinse and drain the black beans and set aside. Sauté chicken, onions and garlic until chicken is almost done and add the black beans, continue cooking until chicken is cooked. Heat tortillas and fill with meat and bean mixture and your favorite other taco toppings.
Hot Sauce - 1 can of tomato sauce and ½ to one can (depending on how hot you like it) of smoked jalapeños in adobe sauce. Place in a food processor and puree until a smooth sauce. Keeps very well refrigerated.
Alternative Recipe Ideas

- Shredded raw cabbage is very good in tacos and is very traditional.
- Substitute pork or beef for the chicken.
- Add several sprigs of fresh cilantro.
- Add a teaspoon of chili powder to the chicken while cooking.
- A ¼ cup of corn makes a nice addition.
