Peanut Brittle
I thought my Mom made the best peanut brittle until I made this, it is the best nut brittle I have ever tasted, yum.
What is Alpha-gal?
Servings: 12
Prep time: 10 min
Cooking time: 20 min
Ready to eat in: 1 hr min - must cool
Utensils: Stock pot, whisk, spatula, parchment paper
- 1 cup sugar
- ½ cup corn syrup
- 1 tab butter or Earth Balance
- 1 tsp vanilla
- 1 tsp baking soda
- 1½ cup mixed salted nuts
Directions
Heat and wish the sugar and corn syrup until it is a golden brown. Fold in the nuts and then quickly stir in the butter, vanilla and baking soda. Immediately dump onto the parchment paper or Silpat and push flat with the spatula. Let cool and break into pieces.
Alternative Recipe Ideas

- ½ cup cashews, ½ cup Spanish peanuts and ½ cup pecans makes a great mix.
- A couple dashes of cinnamon and a dash of nutmeg.
