Directions Chop the onions and garlic and sauté in a little butter until softened. Add fire roasted tomatoes if you have them, if not regular diced tomatoes will do. Add everything except the eggs and cheese. Simmer sauce for a few minutes to blend the flavors. Crack the eggs in the sauce to poach. Cover and cook at a low simmer until the eggs are poached hard or soft to taste. Turn off burner add shredded cheese and cover until cheese is melted. Alternative Recipe Ideas
