Breakfast Burrito for Alpha-gal We like breakfast any time so at least one a week we eat breakfast for supper. Plus it is super fast. This is yummy for brunch, lunch or any time. Remember garbanzo beans are a good source of protein when you can't eat meat. What is Alpha-gal?

Directions Slice and dice the mushrooms and sauté in Earth Balance. Add the eggs, garbanzo beans, salt & pepper. Toss all into a scramble. Add the cheese and turn off the heat. Allow to sit for a moment to soften the cheese while heating the tortillas. Divide the filling between the two tortillas and roll burrito style. Serve your favorite salsa. Alternative Recipe Ideas
