Chocolate Coconut Cookies
Another treat for our Alpha-gal friends. If you add chocolate chips make sure they do not contain dairy, because most do. The vegan chocolate chips do not contain dairy and are very tasty.
Servings: 3 doz
Prep time: 15 min
Cooking time: 9 - 11 min per batch
Ready to eat in: 10 min cooling
Utensils: cookie sheet, mixing bowl, mixer, spatula, oven mitts
- 1 cup sugar
- 2½ cups flour
- ½ cup coco powder
- 2 cups shredded coconut
- ½ tsp salt
- 1 tsp baking soda
- ½ cup Earth Balance or butter
- ½ cup safflower oil
- 1 tab molasses
- 2 eggs
- 1 tsp vanilla
- ¾ cup milk, almond milk or coconut milk
Directions
Mix all dry ingredients together. Mix all wet ingredients together. then blend dry and wet ingredients. Use a cookie scoop or spoon onto a cookie sheet. Bake 9 to 11 minutes at 375° F, remove to cooling rack.
Alternative Recipe Ideas

- Add 1 cup of chocolate chips.
- Sprinkle a few sliced almond to the top of each cookie before baking.
