Potato Sauerkraut Fritters

A cross between colcannon, fritters, potato pancakes and German food. They are very tasty, something very different for a nice change. Also vegetarian and healthy. Give them a try. What is Alpha-gal?

Servings: 6 to 8     Prep time: 30 min     Cooking time: 15 min
    Ready to eat in: 45 min
Utensils: Frying pan, mixing bowl, vegetable grater

Potato Sauerkraut Fritters
2 med Idaho potatoes - microwaved until cooked
1 cup bagged fresh sauerkraut - squeeze out excess water
1 med carrot - grated
1 small onion - chopped
2 eggs - whisked
½ cup instant oats
2 cloves garlic - minced
1 tsp caraway seeds
salt and pepper to taste
a few slices of jalapenos peppers - to taste - fine diced
1 tsp smoked paprika

Directions

Bake or microwave the potatoes and set aside to cool. Squeeze most of the water from the sauerkraut and place in mixing bowl. Add all the remaining ingredients to the bowl and stir to coat well. When the potatoes have cooled enough to handle cut into small cubes. Leave the peeling on. Add to the mix, course mashing the potatoes as you stir. Form balls out of the mix to your desired size, then press them into patties. Fry in olive oil until golden brown.

Alternative Recipe Ideas

  • Red potatoes substitute for the Idaho potatoes.
  • Various kinds of canned beans - washed and drained.
  • Red and green bell peppers.
  • Add grated zucchini.
  • Top with Parmesan cheese.
  • A similar Russian dish is served with a side of sour cream.
