Kickin Tomato Soup

Not every meal needs to be a production; most of the time we want it fast and now. This is a little twist on canned tomato soup that puts it over the top in flavor. Just good old comfort food for a cold day. Goes perfect with a grilled cheese sandwich.

Servings: 2     Prep time: 5 min     Cooking time: 10 min
Utensils: 1 quart sauce pan

1 can tomato soup with 1/2 can of water and 1/2 can of milk
2 heaping tbl of roasted red pepper - chopped small
2 or 3 sun dried tomatoes - chopped small
1 small clove of garlic -minced
1 shot of Vermouth - optional
A few grinds of fresh ground pepper
1 tsp butter

Directions

Put the soup, milk & water on med heat, while it is warming chop and add all of the remaining ingredients. There are several brands of roasted red peppers, I always keep a jar in the frig. along with a bag of sun dried tomatoes. They are both a fantastic flavor enhancer. Bring to temperature and serve with a grilled cheese sandwich.
