Jambalaya

Good old fashioned Jambalaya, but with chicken and shrimp. Excellent winter dish for those cold days in front of the fire place. What is Alpha-gal?

Utensils: Crock pot, rice cooker

Jambalaya Creole
1 qt tomatoes with juice
1 lg onion - course chopped
1 sm bell pepper - diced
4 stalks celery - diagonal chopped
2 heaping tsp Tony Chachere's Creole seasoning
1 heaping tsp chili powder
2 bay leaves
4 slices turkey bacon - diced and lightly sautéed
2 lg chicken breast - cut into ¾" cubes - sautéed
4 turkey sausages - casing removed - cut into ½" cubes - sautéed
3 tab Earth Balance soy free butter substitute
2 tab flour
½ cup dry red wine
1 qt chicken broth
1 heaping tsp thyme
2 heaping tsp diced garlic
salt and pepper to taste
diced jalapeño per your taste
3 to 4 okra - optional - cut into ¼" pieces
1 lb shrimp - unthawed or raw
3 cups white rice
3 cups chicken broth, 3 cups water, ¾ tsp salt

Directions

The cooking time on this one depends upon your crock pot and how you want to simmer the dish. Place the first 7 ingredients into the crock pot on hi. Lightly sauté the bacon and remove to pot. Sauté chicken in bacon drippings, season with sage, S&P. Under cook slightly and remove to pot. Add olive oil if needed. Sauté chicken sausage lightly, season with sage and garlic. Add butter and flour to skillet and whisk until mixture turns a light brown roux. Deglaze skillet with red wine and chicken broth, add to pot. Add thyme, garlic, salt and pepper. Add jalapeño and okra per your personal taste. Bring the jambalaya to temp on hi then turn to med, simmer at least 1 hr to blend all the flavors and finish cooking the chicken.

Add the shrimp just before serving to keep from having over cooked leathery shrimp. If they are pre-cooked unthawed shrimp it only takes about 10 to 12 minutes to bring them to serving tempter in the hot liquid. It they are raw shrimp allow 15 to 20 minutes to fully cook depending on the size of shrimp used. Cook the rice separately with the chicken broth and water. To serve place a large scoop of rice in a bowl and spoon the jambalaya over the rice.
