Red Beans & Rice Side Dish

A mouth watering side for lots of meals. We like it topped with a fish filet or chicken breast. A slice of corn bread and you have good eatin'. What is Alpha-gal?

Servings: 8 to 10     Prep time: 30 min + soak over night     Cooking time: 3 to 4 hr crock pot
    Ready to eat in: 5 hr
Utensils: Large stock pot or crock pot, small sauce pot for the rice or rice cooker

Red Beans & Rice
1 bag dried red beans - soaked
2 cups vegetable or chicken stock
water to cover
1 tsp sea salt - to taste
½ tsp fresh ground pepper
2 tsp chili powder
½ lb ground turkey, turkey sausage or pork sausage for non-Alpha-gal recipes
1 med green pepper - diced
1 lg onion - diced
4 lg cloves garlic - diced
3 dried smoked jalapeñoes - crush and remove stems
2 tsp creol seasoning
1 tsp file gumbo
RICE
2 cups white rice
2½ cups vegetable broth
2 cups water
1 tsp sea salt

Directions

Soak beans overnight in water, salt and 1 tsp vinegar. Add beans, broth, salt, pepper, chili powder and enough water to cover well to stock pot simmer for at least 2 hrs. Longer is better, keep adding water to keep covered and stir occasionally. After the beans are well cooked add the remaining ingredients and simmer until the ground turkey is cooked. Cook rice until tender about 30 min before serving time. Spoon rice onto plate or in a bowl, cover with red beans and top with a sautéed fish filet, chicken breast or shrimp.
