Glazed Pork Chops

In the cold weather we need some good hearty comfort food. These chops will be moist and tender with a nice tangy sweet glaze.

Servings: 4 to 8     Prep time: 15 min     Cooking time: 50 min +
Utensils: Baking dish with lid or foil.

Pad Thai Noodles
1 small yellow onion - sliced
4 slices of jalapeņo pepper - finely chopped
1 clove garlic - chopped
2 stalks of celery - bias cut
2 tab molasses
2 tab Dijon mustard
2 tab soy sauce
1/3 cup vermouth
3 tab cider vinegar
4 to 8 pork chops
salt & pepper

Directions

Chop all the vegetables and place in a roasting pan large enough for all your chops. Mix all the glaze ingredients except the pork in a small bowl. Salt and pepper the chops. Coat both sides of all the chops and place evenly in the pan. Pour the rest of the glaze over the chops. Cover and bake at 375° F for 35 minutes, then turn the oven down to 300° F for 15 more minutes to 25 minutes for thicker chops. This dish goes very well with rice or noodles.

Alternative Recipe Ideas

  • Also good with boneless pork ribs or a pork loin.
  • Add some carrots or even potatoes to the dish.
