Mexican Sausage and Rice with Vegetables - one pot

Super fast, super good meal in one pot.

Servings: 4     Prep time: 15 min     Cooking time: 30 min
Utensils: Rice cooker

1½ cups rice
2 cups beef broth
1 cup water
1 can diced tomatoes
2 cloves garlic - minced
1½ tsp salt
½ tsp pepper
1 tsp chili powder
½ tsp oregano
couple dashes of cayenne - to taste
½ cup celery - chopped small
1 small onion - diced
¾ cup frozen peas
4 servings - cooked smoked sausage sliced
fresh broccoli

Directions

Place the rice, broth, water, seasonings, onions and celery in the rice maker. Start the rice maker. Use pre-cooked smoked sausage or if you use a raw sausage like a brat, cook it first. Add the sausage and peas to the rice and put the fresh broccoli in the steamer tray. When the rice is finished enjoy.

Alternative Recipe Ideas

Almost any link sausage or kielbasa will work, we used a chicken and cheese sausage in the photo. Any vegetable you can steam will work in the steamer, or your favorite frozen mixed vegetables.
