Turkey Cranberry Sweet Potato Hash

This sounded good when I first saw it, but tasted even better. The added benefit is a super quick breakfast on work days. Make a batch ahead, refrigerate, scoop a couple of spoons in a skillet and crack a couple of eggs, push down the toast. By the time the eggs are cooked the hash should be hot too. You get an awesome hot breakfast in less time than the drive thru at rush hour. This is also my first posted recipe using a new style pressure cooker.
What is Alpha-gal?

Servings: 10     Prep time: 20 min     Stove top cooking time: 15 - 20 min    Pressure cooker cooking time: 8 min
    Ready to eat in: 35 - 45 min
Utensils: Frying pan, or pressure cooker

Turkey Crandberry Sweet Potato Hash
2 tsp Earth Balance butter
1 lb ground turkey
1 sm onion - diced
½ cup dried cranberries
3 sweet potatoes - peeled and diced
1/3 cup chicken broth
¼ cup pepitas or pistachios - shelled and chopped
1½ tsp cumin
1 tsp sage
1 tsp smoked paprika
1 tsp salt
½ tsp fresh ground pepper
1 tsp red chili sauce or other hot sauce - to taste

Directions

Peel and dice the sweet potato and onion, met butter in skillet, add all ingredients to skillet. Fold together until potatoes are tender and turkey is thoroughly cooked. For pressure cooker add all ingredients to cooker, stir all ingredients together, cook 8 min and release pressure.

Alternative Recipe Ideas

  • Spice it up a little more.
  • Make with white potatoes and leave out the cranberries and nuts.
