Shrimp Hot Pot

A somewhat traditional oriental hot pot soup but for those with gluten and dairy allergies. What is Alpha-gal?

Utensils: Rice maker or large stock pot

Farm
1 qt stock - chicken, seafood or vegetable
1 cup water
2 cups white rice
2 tsp sea salt - less if the stock is salted
1 tsp fresh ground pepper
1 tsp basil
1 tsp red pepper flakes
1 tsp lemon grass
2 tsp sugar
3 to 4 tsp red curry paste - to taste
3 to 4 jalapeñoes in adobe sauce - chop fine - plus or minus to taste
1 lime - juiced
6 green onion - chopped
1 lb shrimp - peeled and tail off
½ lb small scallops
2 fillets white fish - ½" cubes - optional
1 can coconut milk

Directions

Add the broth, rice and spices to the rice cooker or stock pot bring to a boil and reduce to a simmer. Add all the fish and simmer with the lid on until the rice and all the fish is cooked. Then stir in the coconut milk, simmer long enough to bring back up to temperature. Adjust curry and peppers to your taste, it should have a real kick to be authentic.

  • Works well with most types of fish or a mix of seafood.
