Fish & Black Bean Taco Recipe

Don't turn up your nose until you try this one time, you will be hooked. I fought it for a long time until one day my favorite lunch place had them for the lunch special. I am a changed man, because there is nothing I love more than a good old ground beef taco. Now that Elizabeth has Alpha-gal this is one of our weekly staples for lunch. Who doesn't love tacos?

    Ready to eat in: 20 to 30 min
Utensils: Frying pan, paper towels

Fish Black Bean Tacos
1 or 2 lg Tilapia or other firm fish fillet - cut into ½" cubes
¼ cup blacking seasoning
1 can black beans - rinsed and drained
1 sm red pepper - diced
1 tomato - diced
4 green onions - chopped
1 sm can sliced black olives
½ cup lettuce - shredded
4 flour tortillas or about 6 taco shells
Your favorite hot sauce

Directions

Pat the fish dry with paper towels. Cube and coat with Cajun blacking seasoning. Sauté the fish, salt and pepper to taste. Add the black beans to the frying pan just as the fish is done to heat them. Cubed fish cooks really fast, don't over cook it. Build your tacos, nachos or burritos as you desire. Squeeze a little lime juice on each with your favorite hot sauce. It is super fast and easy.

Alternative Recipe Ideas

  • Place it over tortilla chips nacho style.
  • Use a combination of fish and shrimp.
  • Add a non-dairy cheese or sour cream if desired.
  • Replace the lettuce with raw cabbage.
