Gluten Free Dairy Free Oatmeal Pancakes

These are really good pancakes by any standard, plus they include healthy oatmeal and can be made gluten free and dairy free. They go really well with fresh fruit syrup. As usual you can substitute standard flour and butter if your allergy does not prevent it. What is Alpha-gal?

Servings: 4     Prep time: 10 min     Cooking time: 15 to 25 min
    Ready to eat in: 25 to 35 min
Utensils: Pancake griddle, mixing bowl, whisk or mixer

Pancakes
1 cup rice milk
2 eggs
2 tab vegetable oil or butter substitute
½ tsp vanilla
2/3 cup oats
2/3 cup gluten free flour
2 tab sugar or syrup
½ tsp salt
1½ tsp baking powder
¼ tsp cinnamon
1 dash nutmeg
oil for griddle

Directions

Add all the liquid ingredients and whisk thoroughly. Fold in all dry ingredients, whisk well or use a mixer to blend and incorporate some air. The oats will absorb liquid slowly. Let the batter sit a few minutes to soak up the liquid. Depending on the type of gluten free flour you use it may absorb liquid differently. If needed add a little water so that the pancakes pour into a nice pancake thickness. Brown on both sides and transfer to a warm oven until they are all cooked.

Alternative Recipe Ideas

  • Fresh fruit preserves or freezer jam heated.
  • Sliced bananas and strawberries or any of your favorite fruits like blueberries, pears and peaches.
  • Add blueberries to the batter.
  • Add chocolate chips or raisins to the batter.
