Great for a luncheon or finger sandwiches. Make them as thick or thin as you like.

Servings: 8 to 12     Prep time: 20 min     Cooking time: 0 min
Ready to eat in: 20 min
Utensils: serving platter or large plate, tooth picks, bread knife or electric knife

Focaccia Sandwich
1 large round Focaccia bread - slice horizontally
mayonnaise
spicy mustard
large fresh spinach leaves
deli sliced ham
deli sliced turkey
thin sliced tomato
deli sliced cheese - any variety you like
toothpicks
green or black olives

Directions

It is just a big sandwich, just one trick: put the tomato between the layers to keep the bread from getting soggy. Slice the Focaccia horizontally, coat both pieces with mayo and mustard. The sandwich will present best if you layer in this order. Spinach first and lap the tips out over the bread. Layer your choice of meat doing the same. Next the tomato then the cheese and place the focaccia top on. Slice into pie shape sandwiches from 4 to 12 slices depending on the event requirements. Hold each piece together with a toothpick and top with an olive. arrange on a plate or platter.

Alternative Recipe Ideas

  • Any deli meat combo - pastrami, beef, chicken, etc.
  • Add sliced pickles.
